Wagyu is a bovine breed originating from Kobe, Japan. It is also known as Japanese Black. The name comes from the kanji (wa, meaning “harmony” but historically closely linked to Japan) and (ushi or gyu, cow/cattle/beef). The meaning is, quite simply, “Japanese cow.” Its meat is highly prized for its flavor, tenderness, and juiciness, and is used in high-end “gourmet” dishes. Wagyu cuts are identified by their intense marbling—the infiltration of fat within the muscle fibers—which provides its unique flavor attributes when cooked.
